Hey everyone! Recently I have discovered a new recipe that is very healthy and very delicous! And I thought would share it. It was given to me by my sister in law (from Michael's side). This week Michael and I are making it but I am going to be trying ground turkey instead. So we'll see how that goes. If anyone tries it let me know how it turned out and tasted!
Stuffed Sweet Peppers
1 TBS olive oil
1 large onion, finley chopped,
8 medium bell peppers (any color)
1 1/2 lb ground chicken
3 roma tomatoes, chopped
3 large garlic cloves, minced
1 cup peeled and grated zucchini
2 tsp salt
1 tsp black pepper
2 tsp dried oregano
1/2 c grated parmesan cheese
1. preheat oven to 350
2. heat olive oil in a small pan over medium heat and brown the chopped onion. set aside to cool.
3. wash and dry the bell peppers and slice off the top. remove the seeds and white membrane. cut an "X" in the bottom of eat pepper. (this will allow the liquid to escape while cooking)
4. in a large bowl, combine the remaining ingredients
5. stuff the peppers with the filling and place them in a baking dish
6. bake for 55 minutes
7. enjoy! :-)
